Tofu and Vegetable Yellow Coconut Curry


I've been meaning to post this entry for a long time… but I keep forgetting! It’s a delicious vegan dish (when omitting the fish sauce), which I make when we have a meat-less dinner. You really won’t miss the meat in this recipe.

The curry is well flavored and very mild. I’d compare it almost to a korma. The addition of the creaminess from the coconut milk makes this dish ultra-dreamy. Serve this over freshly cooked rice.

Tofu "Cream" - Yofu


Since we've developed dairy allergies, I’ve really missed a good creamy yoghurt. Any dairy-alternative yoghurt usually has ingredients that I choose to avoid and/or they taste absolutely disgusting.

If you’re not offended by the slight beany flavor from tofu, it is a good dairy-free alternative to yoghurt. It’s great on its own, with granola, fresh fruit and to spread on cakes. I’ve also swirled chopped tinned apricots/apricot compote through it to make a fruity-yogurty dessert, yoghurt-tofu, yofu.

Vegan Chocolate Cheesecake



You’ve probably guessed that I’m a real sucker for desserts. However, moving to the US has really put a dampener on things – it drives me insane. Some days I just want to buy a dessert, without having to worry about my ill effects afterwards. If I’m lucky, I get bloated and diarrhea, if I’m unlucky I get a hives or mild anaphylaxis.

Gluten-Free Vanilla & Strawberry Sponge Cake


This cake was a mish-mash of two recipes I've used before. It uses a modified version of the gluten-free chocolate cake and the tofu “cream” – yofu recipes, both of which are equally delicious. I decided to top the cake with a thin layer of strawberries, but was far too lazy to make a glaze for them because I was impatient and wanted to eat it.

The tofu "cream" and strawberries top this wonderfully light-mousse-like-sponge-cake really well. It's incredibly light, packed full of protein, and is gluten and dairy-free.

Spinach & Tofu Curry


I try to cook at least one dinner a week that has no meat in it. To ensure that we have enough protein for the day, I usually substitute the meat for beans or tofu.

The ingredients of this curry are nothing special. However, it is well balanced with fruit, vegetables and protein, and when served with rice, it will give you a good square meal. It’s a truly robust curry, full of flavor and easily digestible.

Chinese-Style Stuffed Tofu



We decided to invite two couples over for dinner one night. It was the same two couples that relocated to the US, at the same time as we did. I decided to cook them a Chinese dinner. This is where the trouble began - they weren’t expecting traditional Chinese food.

My menu consisted of rice served with steamed lap cheung (Chinese pork sausage), steamed fish with ginger and spring (green) onions, stuffed tofu, braised shiitake mushrooms, stir fried choi sum (Chinese greens), jiaozi and Szechuan pork balls. For dessert - tang yuan
